The first sip leads with soft bright juniper, then the clever bit kicks in: a brisk hit of sea salt and a rich savoury umami note, like the gin remembers it was made beside the Atlantic. It rolls into something smooth and almost buttery, with a faint nutty, chestnut warmth and a gentle dry grip on the finish. Earthy, savoury, a little wild. Not sweet, not perfumey, properly different.
